CZECH PIVO

XV ANNIVERSARY BEER

Czech Pale Lager || 4.0% || Willi Becher || 10° P
Taste: herbal pine, toasted bread, light pepper spice
Notes: Notch is the only brewery in the US to employ the historic brewing process of pitch lining lagering barrels. "Pitch" is a combination of tree resin and paraffin, and in the Czech Republic it was used to coat wooden brewing vessels previous to the use of metal. This ensured the beer was protected from the negative influences of tannin and oak extracted from the wood, and instead resulted in the pitch character making its way into the flavor and aroma of the beer. So, we set out on this labor of love project to recreate a process long lost to modern technique, and to discover what this pitch character was all about.

THE STANDARD

Czech Pils ||  4.4% ||  Czech Mug || 12° P
Taste: Lemon, Malty Sweetness, Bread
Notes: Classic Czech pale lager, brewed with floor-malted Pils malt and Sterling hops. Double decoction, open fermentation, and extended lagering time bring a bit of Plzen to Brighton and Salem.

POLOTMAVÝ

Czech Amber Lager || 4.2% || Czech Mug || 11° P
Taste: Toast, Caramel, bread
Notes: Polotmavy is Czech for “half-dark,” this 11° Plato Czech Amber Lager is brewed with Czech floor malted pils Vienna and Munich malts for notes of toast, caramel and bread. Czech Sladek hops balance out the malt and provide a spicy finish. This beer also undergoes a unique mashing schedule known as an enhanced double decoction for a more complex malt flavor. Open fermented, naturally carbonated, lagered forever

TMAVÝ

Czech Dark Lager || 4.5% || Czech Mug || 12° P
Taste: Sweet Dried Fruit, Toasted Dark Bread, Dry Finish
Notes: Tmavy is Czech for "dark". Double decocted, open fermented, naturally carbonated, lagered forever.

GERMAN AFTERNOONS

German Pils || 4.5% || Willi Becher
Taste: Crisp, Dry, Hoppy
Notes:  Brewed with 100% Bavarian heirloom Pils malt, Perle, and Spalter Select hops and fermented with a classic bavarian yeast strain. German Afternoons has an upfront malt fullness that quickly leads to a pleasant drying balanced bitterness. The floral hop aroma comes from Notch's favorite German variety - Spalter Select. Named for the John Prine album, a German Afternoon is a spontaneous afternoon spent enjoying yourself, with a beer or two, instead of doing the errands or chores you "should" be doing.

LOST IN THE DREAM

Helles Rauchbier || 4.5% || Willi Becher
Taste: Bright, Clean, Subtle Smokiness
Notes: Rauchbier is the same recipe as our Helles Lagerbier but the grain bill includes Bamberg Rauchmalt, barley malt that has been dried with Beechwood smoke.

HEFE WEISSE

Bavarian Wheat Bier || 5.2% || Weisse Glass
Taste: Clove, Banana, Full-bodied
Notes: Classic Bavarian wheat beer and one of the most technically challenging beers we make. Open fermented for maximum aroma and flavor, with clove and banana aromas formed from the unique Bavarian yeast.

Notes: Brewed with wheat and pils malt, and hopped with only Citra.

All Mod Cons

ESB || 5.5% || Willi Becher
Taste: caramel, malty, grape
Notes: Caramel and toffee malt character that lands dry. The English-style best bitter is a very sessionable, malt-driven, yet finishes dry. "Bitter" 3.0 - 3.9 ABV "Best Bitter", 4.0 - 4.9 ABV, "Extra Special Bitter" 5.0-5.9 ABV

OVER IT

British Dark Mild || 3.8% || Czech Mug
Taste: Bread Crust, Caramel, Toast
Notes: Once the most widely consumed style in England (until Bitter took over), malt and caramel are part of the flavor and aroma profile of the English-style mild. Though a darker beer, there is only a subtle roast character.

Taste: Crisp, Bready, Earthy Hop
Notes: Triple decocted pale lager, dry hopped with Polish Lubelski hops. Salem had a long history of Polish immigration, particularly the area around Notch, and the beer is named after our head brewer/founder Chris’ family (Lojko, from Warsaw Poland). We are a nation built on the backs of immigrants, cheers to us! Na Zdrowie!

American Corn Lager ||  4.2%  || Willi Becher
Taste: Pepper, Floral, Crisp
Notes: The Mule uses heritage corn grown in Massachusetts and malted by Valley Malt in Hadley MA. Corn you say? Yes corn. It is a wonderful grain to use in lager, as it mellows the barley and provides a bit of perceived sweetness in the aroma.

PUNTO PILS

Caribbean Lager ||  4.5%  || Willi Becher
Taste: Soft, Mild Sweetness, Easy-Drinking
Notes: Punto Pils is Notch Brewing's homage to a Caribbean Lager and reflects the diversity of Salem's Point neighborhood. Proceeds of Punto Pils will go directly to The Punto Urban Art Museum.

Polish Porter || 7.2%
Taste: Roasted, dates, toffee
Notes: Often called the Polish Brewing Treasure, this style was created in the 19th century as a continental version of the famous British porters. Brewed with Munich, Pilsner and dark roasted specialty malt to create a deep, malty flavor with a noticeable roastiness with flavors of licorice and toffee.

Notes: We used the recipe and process of the Standard and substituted the Czech base malt in the Standard to Sugar Creek Malt from Indiana. As this beer displays, local malt can certainly compete with the classics from Europe.

TAP ROOM:

Full pours for on-site consumption (1/4 liter, 1/2 liter and liters) and cans to go. Communal tables, counter and table service, it's a place to socialize with friends or meet new ones. 

BIERGARTEN:

Open year-round (snow, sun, whatever), our 2000 sq ft Biergarten has a seating capacity of 250. Communal tables, heaters in the winter, umbrellas in the summer.

BREWERY:

We hope that our brewery will provide customers a way to see the unique brewing processes and equipment we use - a traditional decoction brew-house, open and closed fermentation, horizontal lagering tanks, German gravity cask dispensing, and a draft system imported from the Czech Republic – tools, process and equipment that will allow a wide variety of session beer (and occasionally non-session beer) to be produced.
